if you've been on foodtok or instagram at any point recently, you've definitely come across the baked pancake bowl trend, and i am fully on board with it. the concept is simple: all the ingredients of a pancake go into an oven-safe bowl, you bake it, and you end up with this soft and fluffy pancake in a bowl! It's honestly so much more satisfying than a regular flat pancake and also way more time efficient then having to stand and cook pancakes. i knew i needed to try my own version of the pancake bowl trend (however late i may be oops) and since we are fully in spring and summer mode right now, lemon was the obvious choice. so here is a single serve lemon drizzle pancake bowl that tastes like a lemon drizzle cake but make it a lighter more nourishing moment.

i have such a soft spot for lemon flavoured baked goods and i think it's because lemon has this quality of making everything feel bright and fresh without being overwhelming. It is also the most refreshing flavour for the warmer days. a good lemon bake hits differently to a chocolate one, it's lighter and somehow still feels indulgent at the same time. the lemon zest is really where the magic lives in this recipe. zesting the entire lemon into the batter gives you that intense, fragrant lemon flavour that the juice alone just can't achieve, so please don't skip it or reduce it (unless you don't like a strong lemon flavour). opt for unwaxed organic lemons whenever possible otherwise you will just be zesting petroleum wax, pesticide and artificial dyes into this pancake bowl! they are also more flavourful than waxed lemons since the citrus flavour lives in the oil glands of the peel whereas in waxed lemons the oil glands get coated. the tablespoon of lemon juice adds the tartness that makes the overall flavour feel properly lemony rather than just lemon-scented.

absolutely! the drizzle is a lovely finishing touch but the bowl is completely delicious without it. all the lemon flavour comes from the zest and juice in the batter itself, so you won't be missing anything flavour-wise if you skip it. if you want a little extra sweetness without a drizzle, a light dusting of powdered monk fruit or a drizzle of honey over the top works really well too but i find the pancake bowl to be sweet enough as is.

What yogurt works best in this recipe?

a thick, creamy yogurt gives the best result. full fat greek yogurt is ideal because of its high protein content and thick consistency, which makes the batter rich and moist. if you're keeping the recipe dairy free, use the thickest plant-based yogurt you can find. a thick coconut yogurt or a soy-based greek-style yogurt are the best options because thinner yogurts can make the batter too loose and affect the final texture.

yes, oat flour is naturally gluten free which keeps this recipe free from containing gluten. if you have coeliac disease or high sensitivity to gluten, make sure to use certified gluten free oat flour as standard oats can sometimes be cross contaminated with gluten during processing.

this recipe is single serve and bakes in under 20 minutes, making it a really easy option to prep fresh each morning without much effort at all. that said, you can absolutely bake it ahead, let it cool, and store it in the fridge for up to 2 days. reheat in the oven at a low temperature or in the microwave for about 30 to 40 seconds before serving. it's slightly better fresh from the oven but still really good reheated. you can also just eat it cold straight out the fridge too, just depends on your personal preference!

How do I know when the pancake bowl is done?

the top should look set and matte rather than shiny and wet. the edges will be slightly pulled away from the sides of the bowl and may be slightly brown. if the top is still visibly wet or liquid, give it another 2 minutes and check again. avoid overbaking as the texture will become dry rather than soft and custardy.
